Mexican Cuisine
If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.

Bland food. Rude staff. and I believe have a bait and switch going on with a Restaurant.com coupon. So you think you might be getting $15 worth of food for $5 but when you go to pay they say "No, that's a scam. We won't accept that". Rude cashier told me tons of people have tried to use the coupon. When I suggested that they might do well to have a sign that states they will not accept the coupon prior to the ordering process that might be good. She acted like that was a dumb suggestion. Which if the purpose is a bait and switch to get you to come in to spend money then yes, that would be dumb. Again, the food is very bad anyway. and with the rude cashier it just made for a bad experience.

I went into my relationship with Chava's VERY optimistically. After 4-5 more experiences i have a little more to say about it. First, I like it. I really do. The food is good, the portions size is insane, and the location is great! That aside I do feel a little too rushed in there most of the time. So much so i have avoided going there a few times lately. The place has a subway style"pick your ingredients and they make it for you right there behind the glass" sort of thing. If you are somewhat new to the place there are a lot of choices and you're expected to know what you want immediately. I like to look and see what appeals to my eye before i make a definitive answer. And no, I'm not that person in line that holds everyone up for a little too long. I'm the regular customer that just wants a second to pick what i want on my burrito. Will I go back? Absolutely! I think I'll try it a little early for lunch, and also a little later to see how the lines are at other times other than 11:45-1:05 for lunch.

I LOVE Mexican food, just not here. I orderd a three taco plate with rice. Shredded Beef, Grilled Chicken, and Chorizo. In all three tacos, the tortilla was cold, the meat portion was small and didnt have much flavor (chorizo looked like ground hamburger), and barely warm..( ** call the Health Dept). In all three tacos, the pico de gallo dollop was bigger than the entree. The celantro rice was good. $ 9 for three tacos, rice and a drink! yeech! This place is new, so maybe the bugs have to be worked out and might improve. The location downtown will cater to area weekday business lunch and students from the college. My advice, head to the bell and the meat will be hot and have a bit more flavor.

This place is quick and (relatively) cheap Mexican food. Chipotle style make your own burrito/taco/etc. Only things I ding it for are the booths, a lot of which are old and in need of repair, and the fact you have to pay for water if it's after like 11PM.

I eat at least one burrito a week from Chavas. The ingredients are fresh, the meat is tasty and the hot sauce rocks. If you like it really spicy, ask for the special sauce they keep under the counter. Chavas gets an extra star for being open really late. That's huge in Terre Haute, especially downtown. I'm really not hung up on the authenticity of my burrito, or its cultural cred -- if it tastes good, bring it on : )

Dined 12/14/2012 In town for my graduation from ISU's post-grad program. The restaurant is walking distance from the university and our hotel. We stopped for lunch and were impressed with the food. Mexican restaurants in the US are generally Tex-Mex not truly Mexican, no difference here. My rating combines the atmosphere, cleanliness, and friendliness of staff. (see my pictures, all 7 are mine, but aren't linking to my review) We enjoyed our burritos, they were good, but nothing special setting them above or below most other Mexican style restaurants. It was nice to be able to enjoy a cold beer with our food.

As a Hispanic I know what Mexican food is. First of all the burrito is not Mexican food but it has come to include several Mexican ingredients and more. The meat is genuinely what the different types of meats taste like in Mexico. I would highly recommend this place if it were not for their rude service. If Terre Haute didn't have such a low choice of Mexican restaurants I wouldn't come here. Moe's just as good.

Let me start with the disclaimers: I am not from Indiana but the east coast; I have been to CA, GA, TX and Spain. That and I do not eat red meat or pork, so this will be leaving out a certain selection. I ordered a burrito and a kids plate, which was helpful being that the kid with me is pickier than most. The deli style line was quick and put me in control of exactly what I wanted and did not want. The ingredients where generally the like any other place - pick and choose. I would/will go there again. In fact, it was suggested by a few other consultants that have come to the site in this town. I am unsure why this place has received low reviews. I have gone to the other Mexican eateries in the surrounding area . They and this place are not what I would consider Mexican coming from Boston....but then again this is not Boston or San Fran or Austin. If a person takes a moment to realize where they are eating then maybe there won't be such a disappointment.

People rave about this place and I'm not sure why. Both times I've been (once for lunch and once for dinner) the food they served was obviously old and not very warm, it was also VERY bland.

I love spicy and exotic, but Chavas is neither one. I went there thinking I would be pleased as the other restaurants that is owned by this gentleman are good. This one is not up to the same caliber. The food is never at the right temp. The "spices" are lame. It's pricey and yes...the people that work there are VERY rude. I have found bones in my chicken burrito TWICE!!! and on both occasions they did nothing. They just stared at me until I walked away. I will not be going back any time soon and would advise anyone to stay away as well.
